North Florida Vacation Ideas Winter?

Hello, my family and I want to see if anyone has any suggestions. live in South Florida and want to go in northern Florida, Georgia, Tennessee, or even this winter break. want to do something like camping and try not to be near all the tourist traps. We like things as Silver Springs in Ocala, because it was New Year's Day and there was hardly anyone there. any suggestions?
